About Me
Hi, I’m Vicky! I live in the PNW with my wonderful husband, two kids, and two crazy dogs. I was born in Coahuila, Mexico, and raised in Texas as the youngest of eight in a big, loud, fun Mexican family where food was always the heart of every gathering.
When I moved away, I began cooking to recreate the traditional meals I missed—tamales, frijoles rancheros, mole, tacos—and share a taste of Mexico with new friends. In 2020 I thought I could bring a little bit of joy to my friends and neighbors through some yummy food.
Today we continue to cook from our commercial kitchen in Redmond and our meal kits, wholesale burritos, catering, pop up events and cooking classes continue to keep us busy while we share our Rice, Beans & Happiness.
